Squash Casserole


3 Yellow Squash

3 Zucchini Squash

1 can of Chicken Broth

1 cup of Margarine or Sweet Cream (I use coconut oil now

Jiffy Cornbread Mix

One bag of Cheddar Cheese

1 large yellow, White or Vidalia onion

 

Preheat oven. Make Jiffy Corn Bread Mix. Cook Yellow Onions and Zucchini Squashes in water until tender. Then place in a casserole dish with corn bread mix. Add margarine and chicken broth. You can reduce of add liquids according to your taste. (For example I have relative who really love butter so they substitute and add more) Cover with cheddar cheese and bake until the cheese is melted on top.
